Description
Pea shoots taste like fresh spring peas, which can taste pretty good in January. Four ounces of pea seeds may seem like a lot, but use all of the packet for a planting. Soak the seeds overnight in clean, non-chlorinated water. Peas expand, so use a large enough container, and enough water to cover.
Rinse the soaked peas in a colander, and spread them as evenly as you can on the surface of the hydrated potting mix. Mist the seeds, to clean them off, and cover them for about 3 days. If there is mold present, once the cover is removed, a mist with the sprayer should knock it down.
Pea shoots, if snipped above the lower node, should give you a second harvest, sometimes even a third.
